Ranching Terminology Explained !

Ordering a Whole, Half, or Quarter Beef from your local rancher is always the best way to get the most bang for your buck ! We get many questions from first time customers, and we would like to address them here, so you can be confident when making your very first time beef order with us.

Basic Terminology:
Live Weight: How much the animal weighs when it's out in the pasture.  
Hanging Weight: This is how much the animal weighs "on the hook", or after it's been slaughtered. Hanging weight is mostly meat, but still includes a whole lot of bones you that you can't do much with.
"Cut and Wrapped" Weight: How many pounds of actual meat you end up with in your freezer.

Typically, ranchers charge by hanging weight of the animals because similarly, that is how the butchers charges.

How much does a whole beef weigh?
The hanging weights of our cattle vary. Here is an estimated list:

  • Quarter weighs:

  • Finished is approximately 150-200 pounds

  • Half weighs:

  • Finished is approximately 300- 400pounds

  • Whole weighs:

  • Finished is approximately 600- 800pounds


How much meat will I get from the hanging weight?
The true amount of meat you get after the butcher has removed many bones and undesirable bits is approximately 60% of the hanging weight, meaning a grain fed whole beef will yield about 450 pounds of well-cut, packaged, delicious beef to stock your freezer with!

Price Per Pound Hanging Weight-

  • Quarter prices:

  • $4.50/pound Hanging Weight Grain/ Grass finished

  • Half prices:

  • $4.35/pound Hanging Weight Grain/ Grass finished

  • Whole prices:

  • $4.25/pound Hanging Weight Grain/ Grass finished

    All cut and wrap fees are charged separately by the butcher.

  • The butchers we use are between $0.85-$1.15/LB Hanging Weight.

    Estimated Final Cost (Weight is variable for each animal)

  • Quarter prices:

  • Finished - Approximately $800- $1,200

  • Half prices:

  • Finished - Approximately $1,350 $2,200

  • Whole prices:

  • Finished - Approximately $2,700-$3,800


    Quick Rundown of the Process:

  1. Decide your size (quarter, half, or whole).

  2. Fill out a custom cut sheet for half and whole orders (quarter orders not applicable).

  3. A cut sheet determines what cuts of meat you will receive.

  4. Place your deposit that goes towards your final cost.

  5. We schedule your beef to go to the butcher.

  6. Once at the butcher, your meat gets dry aged for 10-14 days, cut up, packaged, and frozen. This whole process, on average, takes 2-3 weeks.

  7. We will delivery your beef to your doorstep!
