French Dip Sandwiches

PREP TIME : 5 minutes

COOK TIME : 1 hour

ADDITIONAL TIME : 35 minutes

TOTAL TIME : 1 hour 40 minutes

INGREDIENTS

  • 2-3 lb chuck roast, cut into 3 fairly equal size pieces

  • 1 quart (4 cups) beef broth

  • 1 packet au jus mix

  • 1 packet onion soup mix

  • 1 tsp garlic powder

  • 1/2 tsp black pepper

  • 6 hoagie rolls, sliced

  • 12 slices of provolone cheese

INSTRUCTIONS

  1. In the insert pot of the Instant Pot, add all ingredients, stirring well to combine.

  2. Use the Manual/Pressure Cook button to select a cook time of 60 minutes at high pressure.

  3. Once the cook time is complete, allow a natural release of pressure.

  4. While the pressure is releasing, toast the sliced hoagie rolls on a baking sheet in the oven (I put them in for about 5-7 minutes at 400F), then remove from oven.

  5. After the pressure has released and the valve has dropped, carefully open the lid. Remove the chunks of beef to a plate and use two forks to shred.

  6. Add shredded beef to the bottom halves of the sliced hoagies, then top each one with two slices of provolone cheese.

  7. Return the open-faced sandwiches to the oven just long enough to melt the cheese, then remove from oven and place the top half of the hoagie onto the melted cheese.

  8. Ladle the au jus from the insert pot into small bowls for dipping.

  9. Optional : Add grilled onions to your sandwich.

NOTES

If you don't have an Instant Pot, you can also make these in a slow cooker. Simply combine the beef (no need to cut it), broth, onion soup mix, au jus packet, garlic powder, and black pepper in the slow cooker. Mix well. Cook on Low for 6-8 hours, until beef is pull-apart tender. Assemble as directed above.
